The tasting begins with a wine that breathes and comes alive in a light, playful spiral, with touches f angelica, coconut, cinnamon, cocoa and tobacco. In the mouth, the wine reaches a state of complex fullness: earthy, smoky and pearly, underscored by the vibrant warmth of peppery spice. The sensation of intesity develops and melts into a deep, rounded heart, with a fruity, exotic maturity and a slight touch of aniseed. The sensation, almost unsettling is even more pronounced in the finish, while the notes of spice, still present, remain discreet, with toasted and iodine flavors.
Wine Advocate
The 1999 Dom Perignon is a little flabbier than the 2000. Smoke, toastiness, tar and ripe fruit emerge from the glass in a generous, expansive style. The 1999 offers more body than the 2000 but the aromas and flavors are less well-articulated. This is a relatively simple Dom Perignon, yet the wine possesses outstanding balance and plenty of harmony. According to Chef de Caves Richard Geoffroy the warm vintage also resulted in relatively high yields, and the low-acid style is most reminiscent of the 1976. Anticipated maturity: 2009-2024.

Wine Spectator
There's a high-toned minty graphite accent to the aroma, with a citric edge on the palate. The structure is overlaid with lemon and bread dough notes. This is tight and crisp on the finish, so break out the sole or shellfish, or wait a few years. Best from 2008 through 2020.

Screw Cap
Wines sealed with a screw cap as opposed to a cork, which experts report protects and preserves wine more effectively than does a cork, while also eliminating the possibility of cork taint.
No Sulfites
All wines naturally contain some sulfites, however wines that contain less than 10 parts per million sulfites are not required to include "Contains Sulfites" on their labels.
